Grilled Tomatoes

A few weeks ago Adam and I purchased our barbecue grill, we are in love with it! It just makes everything IMG_5298taste better—and clean-up is so much easier. We have grilled cod fish, ribeye and asparagus among other things. The one dish that has stood out the most was a quick-fix side dish. I bought an amazing piece of cod fish and realized I forgot to buy vegetables to go with it. A couple of days before I had purchased  some heirloom tomatoes at Trader Joe’s. Grilled tomatoes sounded like a good idea, so I googled if I could even cook tomatoes on the grill. I found out that it’s actually possible. My dinner problems were solved!

I put together a quick recipe with things I already had in my kitchen and the tomatoes came out wonderful—so flavorful!

Ingredients:

Heirloom Tomatoes  (1 per person)

Olive oil

Fresh oregano

Salt/fresh pepper

Graded parmesan

Easy easy easy… Cut the tomatoes in half. On the seed side of the tomatoes drizzle some olive oil (Use your good olive oil, I really recommend the California olive oil from Trader Joe’s. Flavorful and comes with an awesome price tag). Grade some fresh pepper and salt—be somewhat generous with the salt. Then add the oregano.

For the grill I recommend mid-high heat. Put your tomatoes skin down and cover. I cooked them for 9 minutes and they came out perfect. The temperature inside the grill was about 400+ degrees. Each grill might be a bit different, just be careful that your tomatoes don’t lose their shape.

As soon as you take them out of the grill add a bit of graded parmesan for flavor.
